We call the highest vineyard block at Celilo (nearly 1,600 feet) CHUP (as in Chardonnay, Upper). Due to its elevation, this block yields the raciest and most linear wines in our cellar - a "chalky laser beam” with Hummingbird-like energy, agility, and precision. Hummingbird's bright personality works fantastically with Oysters, Toro, Uni, …the list is long… (53 cases made)
