The 2023 Domaine Laurent et Pascal Borgeot, Bourgogne Aligoté is a crisp, lively white Burgundy with floral, citrus, and mineral notes. Sourced from the Bourgogne Aligoté appellation, the wine is created by the fourth-generation winemaking brothers Laurent and Pascal Borgeot, who sustainably farm vineyards throughout the Côte de Beaune. Straightforward with prominent notes of white flowers and citrus fruit, including lemon. It also has a subtle minerality. Lively and fresh on the palate, with good length and a persistent finish. Some notes of iodine and saline have also been noted. It is well-balanced with a distinctive character. This wine is a fine accompaniment to simply prepared fish and seafood, as well as goat cheese. It also pairs well with grilled fish, crustaceans, and grilled saltwater fish. For a classic pairing, it can be served as an aperitif with the addition of blackcurrant liqueur (crème de cassis) to make a Kir.
