The 2021 Novaia Valpolicella Ripasso DOC Classico Superiore is a full-bodied, well-balanced red wine from the Veneto region of Italy. It is made using the traditional ripasso method, where the base Valpolicella wine is re-fermented with the leftover skins from Amarone production, adding complexity, color, and structure. On the nose, there's an intense and clean perfume with hints of spice and ripe berry fruit, with notes acquired during aging in wood. The second fermentation on Amarone skins contributes to its unique and complex aromas. The palate is full-bodied and structured with good alcoholic content, medium-low acidity, and evolved tannins. It is savory, persistent, and well-balanced. The wine is a blend of native Valpolicella grapes, including Corvina, Corvinone, and Rondinella. The Novaia winery, which has been family-run for generations, is also certified organic.
